Ada's Lemon Drop Granita

A simple frozen lemon granita topped with whipped cream.
Yield: Makes 1 1/4 pints
Ingredients
tap water | 2 | cupcup |
granulated sugar, granulated | 1 | cupcup |
lemon juice | 0.75 | cupcup |
whipped cream | 2 | cupcup |
Directions
1. Place water and sugar in a medium saucepan and stir over high heat until sugar has dissolved 2. Bring to a boil and boil 5 minutes 3. Cool syrup to room temperature, 45-60 minutes, then add lemon juice 4. Pour into an 8 1/2" x 4 1/2" loaf pan and freeze 30 minutes 5. Scrape any ice crystals that have formed on sides into pan 6. Continue freezing and scraping at 30-minute intervals until mixture is completely frozen and looks like fluffy, slightly wet snow, 4-6 hours 7. Scoop into bowls and serve topped with whipped cream
