Description

A quick baked chicken and vegetable dish with tomatoes, herbs, and optional Parmesan cheese.

Ingredients

onions, medium, sliced

chicken breast, boneless, skinless

black pepper

mushrooms, fresh, sliced
0.5lb
zucchini, medium, sliced

garlic clove, minced

diced tomatoes, with liquid

basil, dried
0.75tsp
oregano, dried
0.5tsp
parmesan cheese, grated

Directions

1. In a greased 13-in. x 9-in. x 2-in. baking dish, place onion and chicken breast 2. sprinkle with salt and pepper 3. Layer mushrooms and zucchini over chicken 4. Combine garlic, tomatoes, basil and oregano; pour over vegetables 5. Cover tightly 6. Bake at 450 deg F for 30 minutes or until juices run clear 7. Sprinkle with Parmesan cheese if desired
