A Malaysian pickled vegetable appetizer with vinegar, sugar, aromatics, and chilled vegetables.
Ingredients

tap water | 0.5 | cupcup |
granulated sugar | 0.33 | cupcup |
lemongrass, chopped fine | 1 | tbsptablespoon |
galangal, chopped fine | 1 | tbsptablespoon |
garlic, whole | 3 | cloveclove |
sesame seed | 1 | tspteaspoon |
turmeric, fresh | 1 | tspteaspoon |
chili paste | 1 | tspteaspoon |
carrots, julienne | 0.5 | cupcup |
cucumber, julienne | 0.5 | cupcup |
cauliflower, broken into florets | 0.5 | cupcup |
shallot, whole | 0.5 | cupcup |
Directions
1. Bring vinegar, sugar, sesame seeds and water to boil 2. Add lemon grass, galangal, garlic, turmeric and chilli paste and simmer for 5 minutes 3.
